It is sweet, and it is not sugar. What is it ?
Abstract:
Tato práce přináší přehled v současnosti nejvíce diskutovaných sladidel.Soustředí se jak na jejich chemický a fyzikální charakter, tak na jejich využití,označení a denní přípustné množství. Samostatnou kapitolu tvoří účinek sladidel na zdraví. V praktické části jsou pomocí dotazníku zhodnoceny znalosti a postoje k sladidlům, především stolním sladidlům.
Abstract:
This work is a summary of the most discussed sweeteners. It is focused on their chemical and physical character. Next fields of view are application, marking and acceptable daily intake. A separate chapter in this thesis is the effect of sweeteners on human health. A questionnaire is used in the practical part.
