New Trends in Pastry and Cake Making

Abstract:

Tato bakalářská práce na téma Nové trendy v cukrářství se dělí na tři hlavní části a to teoretickou, analytickou a návrhovou. Teoretická část vysvětluje a popisuje, co je to cukrářství, jak vznikalo, jak bylo vnímáno dříve a detailně popisuje suroviny, které se používají při výrobě cukrářských výrobků. Dále jsou vysvětleny trendy, které se v tomto oboru uplatňují, ať už se jedná o trend z hlediska vzhledového, chuťového nebo nutričního. Celá teoretická část je doplněna ilustracemi, především surovin nebo trendy stylů zdobení cukrářských výrobků pro lepší představu. V teoretické části je také uvedeno, jaký význam mají pro cukráře i pro jejich klienty sociální sítě, což je potvrzeno v analytické části této bakalářské práce.V analytické části je použit výzkum formou dotazníku, který je aplikován na spotřebitelích. Otázky se týkají jejich preferencí při výběru cukrárenských výrobků. Výsledky jsou pro lepší přehlednost vyhodnoceny v grafech nebo v tabulkách. Cílem je zjistit, do jaké míry jsou spotřebitelé ovlivněni novými trendy v cukrářství. Další výzkumná metoda je v analytické části formou rozhovorů. Jeden rozhovor se týká trendu veganství s cukrářkou, která tento životní styl preferuje a aplikuje při cukrárenské výrobě, další rozhovory s cukráři se týkají trendů v cukrářství obecně. Návrhová část vychází z výsledků části analytické a uvádí tipy, jak s trendy držet krok, kde je sledovat a na co se v cukrářství zaměřit. Závěr vyhodnocuje celou práci a také vyhodnocuje zvolené hypotézy a jsou uvedeny celkové dojmy autorky. Dojmy se týkají především komunikace s oslovenými cukráři, kteří byli požádáni o poskytnutí rozhovoru.

Abstract:

The bachelor thesis deals with New Trends in Pastry and Cake Making. In this thesis there are three main parts: theoretical, practical and suggest. Theoretical part describes what pastry and cake making means, the history of it as well and also describes in great detail ingredients which are used in this business. Trends in pastry and cake making are covered in this part as well from the point of view of design, taste and nutrition. Whole theoretical part includes pictures of some ingredients or design styles of cakes for a better idea. There is also highlighted how social media is important in this kind of business. In next part which is analytical it implements a research used on consumers of cakes and pastries. Questions from the research are based on dessert preferences of customers. The results of the research are shown in the graphs or tables. The aim of the research was to analyze how much the consumers are influenced by new trends in pastry and cake making. Another research method of analytical part is interviewing professional bakers. One of the interviews is about vegan-style baking with the baker who prefers this lifestyle and applies it in her business. Other interviews with bakers are about trends in pastry and cake making in general. Suggest part comes out from results of analytical part. It includes tips for observing new trends in cake and pastry making and which to focus on. The ending part summarize the whole bachelor’s thesis and also overall impression especially of addressed bakers and authors who provided interviews.
