Diplomová práce se zabývá chemickým složením a senzorickou analýzou ovocných destilátů. Teo-retická část diplomové práce pojednává o surovinách pro výrobu destilátů, o kvašení a destilaci, základních principech výroby lihovin, o chemickém složení destilátů. This thesis deals with the chemical composition and sensory analysis of fruit spirits. The theoretical part deals with materials for the production of spirits, fermentation and distillation, basic principles of their production and about chemical composition of spirits.
