Catering in aviation

Abstract:

Bachelor´s dissertation focuses on catering in air transport. The aim of the bachelor´s dissertation is to point out the application of catering in the context of commercial and private air-flights. To achieve the aim of thesis are used following scientific methods: description, analysis, comparison, deduction, synthesis. The thesis examines following hypothesis: While commercial airlinies are using own catering companies, private airlines provide for passengers VIP catering-service from premium restaurants. This catering is based on customer´s requirements. Bachelor´s dissertation examines the hypothesis in three parts: the theoretical-methodological part, the analytical part and the design part. The theoretical part is focused on the general identification of catering and his specifics in air transport. The analytical part of bachelor´s dissertation compares two airlines, Emirates (commercial flights) and VistaJet (a private carrier). The number of transported persons in individual flights is reflected not only in the flight ticket – price, but also in the quality of the services, including catering. Catering for commercial flights (in lower flight classes) is at a quality lower than catering provided on private airlines. The design part summarizes the results of the analysis and points to the possibilities of different implementation of catering in air transport. In the theoretical part, the bachelor´s dissertation used domestic and foreign literature, the practical part is elaborated on the basis of the author's knowledges (own observation and interview with VistaJet colleagues). The importance of bachelor thesis is based on the evaluation of modern trends in catering provided in air transport, including reference to the various variations on which can be realized air transport catering.

Abstract:

Bakalárska práca sa zameriava na problematiku cateringu v leteckej doprave. Cieľom práce je poukázať na aplikáciu cateringu v rámci diaľkových komerčných a súkromných (privátnych) letov. Na dosiahnutie cieľa sú v práci využité nasledovné vedecké metódy: deskripcia, analýza, komparácia, dedukcia, syntéza. Práca skúma nasledovnú hypotézu: Zatiaľ, čo aerolínie realizujúce komerčné lety využívajú služby prevažne vlastných cateringových spoločností, privátne aerolínie poskytujú svojim cestujúcim VIP služby z prémiových reštaurácií, t. j. catering ušitý na mieru požiadavkám zákazníka. Bakalárska práca skúma uvedenú hypotézu v troch častiach: teoreticko-metodologická časť, analytická časť a návrhová časť. Teoretická časť práce je zameraná na všeobecnú identifikáciu cateringu a špecifiká existujúce v poskytovaní cateringových služieb v leteckej preprave. V analytickej časti je porovnávaný catering dvoch leteckých spoločností, a to Emirates a VistaJet. V prípade Emirates sa jedná o komerčné lety a v prípade VistaJet o súkromného prepravcu. Počet prepravovaných osôb v jednotlivých letoch sa odráža nielen na cene, ale aj na kvalite poskytovaných služieb vrátane cateringu. Catering v rámci komerčných letov (v nižších letových triedach) je na kvalitatívne nižšej úrovni, než catering, ktorý je poskytovaný v súkromných lietadlách. Návrhová časť sumarizuje dosiahnuté výsledky a na základe výsledkov analýzy poukazuje na možnosti rôznej realizácie cateringu v leteckej doprave. V teoretickej časti čerpá práca zo zdrojov domácej aj zahraničnej literatúry, praktická časť je spracovaná na základe poznatkov autorky práce (vlastného pozorovania a rozhovorov s kolegami). Význam spracovania predloženej bakalárskej práce spočíva v zhodnotení moderných trendov cateringu poskytovaného v leteckej preprave vrátane poukázania na rôzne variácie, na základe ktorých je možné catering v leteckej doprave realizovať.
