Impacts of the coronavirus crisis on a gastronomic enterprise

Abstract:

Tato diplomová práce mapuje vliv koronavirové krize na gastronomický podnik v časovém rozmezí od března 2020 do prosince 2021. Práce je rozdělena na tři části. Teoretická část definuje specifika gastronomických podniků a služeb v České republice, popisuje historii odvětví, jeho vývoj a současnost. Pojednává o kvalitě a bezpečnosti poskytovaných služeb v oboru gastronomie, definuje gastronomický podnik a způsoby jeho provozování, předkládá typy řízení zásob, výběr dodavatelů a důležitost vztahu k zákazníkovi. Praktická část představuje zkoumaný podnik a vymezuje jednotlivé události, které vedly k omezení či zastavení provozu, s důrazem na jejich dopady na gastropodniky. Návrhová část vychází ze zpracované případové studie a předkládá návrhy opatření ke zmírnění pandemických dopadů určené zkoumanému podniku a státní správě.

Abstract:

This diploma thesis evaluates the impact of the coronavirus crisis on the gastronomic enterprise from March 2020 to December 2021. The thesis is divided into three parts. The theoretical part defines the specifics of gastronomic companies and services in the Czech Republic, describes the history of the industry, its development and the present. It discusses the quality and safety of services provided in the field of gastronomy, defines the gastronomic enterprise and methods of its operation, presents the types of inventory management, selection of suppliers and the importance of the relationship with the customer. The practical part presents the researched enterprise and defines the individual events that led to the reduction or cessation of operations, with emphasis on their impact on gastronomic enterprises. The proposal part is based on the case study and introduces proposals for measures to mitigate pandemic impacts for the researched enterprise and government.
