Quality Management of Gastronomy Services

Abstract:

Management kvality gastronomických služeb je významným prvkem v pohostinství. V teoretické části jsou definovány gastronomické služby, management a kvalita služeb v gastronomii. V analytické části se diplomová práce zaobírá managementem kvality gastronomických služeb v hotelu Hilton Prague. Je představen hotel Hilton Prague a jeho stravovací služby. V této části diplomové práce je popisována pracovní náplň zaměstnanců v odbytové a výrobní části, dále systém HACCP, komunikace mezi středisky a způsoby kontroly kvality poskytovaných služeb. V návrhové části jsou uvedeny zjištěné nedostatky a možnosti jejich odstranění. Zejména vyplňování formulářů HACCP, které by mohlo být nahrazeno elektronickým zapisováním pomocí informačního systému. Dalším závažným zjištěním je změna koncepce restaurace Café Bistro a zlepšení marketingové aktivity. Cíl práce zabývat se způsobem řízení kvality gastronomických služeb v hotelu Hilton Prague byl dosažen.

Abstract:

Quality management of gastronomy services is an important element in the hospitality industry. Theoretical part defines gastronomy services, management and quality of service in gastronomy. The analytical part of the thesis deals with the management of quality gastronomy services in Hilton Prague. Hotel Hilton Prague is introduced, and its gastronomy services. In this part of thesis is introduced job description of the employees in outlets and in the kitchen, then HACCP, communication between departments and ways of controlling the quality of provided services. In the proposal part found shortcomings and possibilities of their removal are listed. In particular, lengthy filling of HACCP forms, which could be replaced by electronic records by information system. Another major finding is the concept change of restaurant Café Bistro and improvement of its marketing activities. The Aim of the study to discuss quality management of gastronomic services in Hilton Prague was achieved.
